Here are the ingredients you are going to need:
- A quarter of a cup of lentils, that you should have soaked at least overnight in water, if you did not, they are going to take a little more for cooking
- Half a cup of brown rice
- Four tablespoons of olive oil
- Four garlic cloves
- Two teaspoons of fenugreek powder
- To tablespoons of tomato concentrate
- One large onion
- A cup and a half of water
- One large carrot
- One tomato, large, diced
- One tablespoon of parsley
- One tablespoon of coriander
- A quarter of a teaspoon of dried oregano
- One teaspoon of turmeric
- One teaspoon of paprika
- Half a teaspoon of cayenne
- Half a teaspoon of ground cumin seeds
- Half a teaspoon of black pepper
- One teaspoon of salt
Now, let’s prepare our brown rice and lentils recipe.
First of all, dice all your vegetables into very little pieces, pay special attention to the carrots, they should not be rough and the pieces should be really small.
Next, add the onions, olive oil, herbs, and all the spices to a cooking pot on low heat, and start sautéing them together.
When the onions have cooked a little, throw in the lentils and the tomato concentrates, then leave for fifteen minutes, if you did not soak the lentils overnight, you should leave them for at least half an hour, if you are using a pressure cooker, they will cook quickly, you should also check the water from time to time as the lentils maybe difficult to cook and may require more.
When the lentils are half cooked, they are a bit rough, check the water and make sure there is enough for the rice, about one cup, then throw in your rice and stir for a minute or two.
Leave the rice cooking for fifteen minutes, you have to be careful because the rice and lentils may be of very difficult varieties to cook, that’s why I will not give you exact timing, you should always pay attention to the rice when it’s cooking because it may burn.
Check the preparation for salt and add more if necessary.

- Two teaspoons of fenugreek powder
- Half a cup of cooked kale
